A Meat Cutter's Pride
When it comes to work, unfortunately, there is less that I am proud of than what I am proud of. Happily, I can say that this here is a visual example of one of those few, proud times. Aside from the extensive amount of work it takes to complete a task such as this on a daily basis, I love those times of year. It makes me feel great to see what I have accomplished. What is even better is the compliments. There is nothing better than the recognition for ones efforts.
Sometimes you just need somewhere to start. That's what I found when I joined the Meat department. I'm big. I'm strong. I look like a convict... all right, that's stereotypical. Kinda funny though. I soon discovered that it was a good fit.
I have never shied away from hard work. Honestly, I find that a good days work and feeling accomplished everyday is a major contributing factor to my sense of being. Pride! Some say that pride is a bad thing, but, I find that Pride is a good thing. I take pride in the things that I do, everyday. I am proud of the work I do and that makes me a better leader.
Top Round London Broil
Top Round London Broil is nothing more than a thicker cut off the top round. One part of the three sub-primal's that make up the Whole round. Basically, the whole round is a hind quarter.
This here is a picture of dinner prior to cooking. London broil on a bed of sliced mushrooms and onion and coated with teriyaki sauce. I baked it on top to allow the vegetables to soak up the juices. Remember to use a deep dish for this one because you don't want an over flow and then you'll enjoy that pre-meal clean up. No fun!
Baked covered at 350 degrees for 20 mins per pound. As you can see, the amount of juices that build can easily overflow with a shallow pan.
Served thinly sliced and covered with the mushrooms, onions and sauce poured over top. A smothered baked potato and salad on the side. Oh so good!
Tip: Top round is a cut best served medium to medium-rare. If over cooked be prepared for a chewy workout.
